The Truth About Smoked Yerba Mate: Tradition and Safety

Every few months a customer emails us asking about smoked yerba mate and whether the drying process is safe. It is a fair question, and it deserves a straight answer rather than a defensive one. Here is how we think about it.
Why some yerba is smoked in the first place
Most traditional yerba mate is dried over a wood fire. The method has a name in Guarani, barbacua, and it has been used in the region for hundreds of years. The leaves sit above the fire, the smoke passes through them, and that is part of where the flavor comes from. It is the same logic as smoked paprika or smoked tea. Not an accident, not a shortcut.
The concern
Smoking any plant material can produce polycyclic aromatic hydrocarbons, or PAHs. At high enough levels, some PAHs are considered carcinogenic. That is the study people usually link to when they bring this up with us.
A few things are worth holding next to that headline.
- PAH levels vary a lot between products, and the levels measured in yerba mate are typically lower than those in grilled meat or smoked fish that most people already eat.
- You are not eating the leaves. You are pouring hot water through them and drinking the infusion, which transfers much less of any compound than chewing the leaf would.
- Long-term studies of mate drinkers in Uruguay, Argentina, and Paraguay have not shown the kind of population-wide effect you would expect if the drink were meaningfully dangerous at normal intake.
Where the real caution is
The research that did raise concerns was specifically about drinking mate extremely hot, not about the smoke at all. Sipping any beverage at scalding temperatures irritates the throat and esophagus over time. The fix there is simple: let your water cool to around 70 to 80 degrees Celsius (about 160 to 175 Fahrenheit) before you pour. That is also the temperature that gives you the best flavor anyway. Boiling water scorches the leaf.
